Golden Māori fried bread made with Missy Lala Baking Mix

Make soft, fluffy Māori fried bread using one 650g packet of Missy Lala Baking Mix.

What You’ll Need

  • 1 × 650g packet Missy Lala Baking Mix
  • 1 cup boiling water (240ml)
  • 1 cup room-temperature water (240ml)
  • ¼ cup vegetable oil
  • Up to 1 cup flour for dusting
  • Approximately 1 litre oil for frying

How to Make Māori Fried Bread

  1. Mix the water and oil: Combine the boiling water, room-temperature water and vegetable oil in a large bowl.
  2. Add the baking mix and stir: Add the Missy Lala Baking Mix and stir until a soft, smooth dough forms.
  3. Cover for 20 minutes: Cover the bowl with a clean tea towel and leave the dough to rest for 20 minutes.
  4. Knead for 2 minutes: Lightly flour the bench and gently knead the dough for 2 minutes.
  5. Roll and cut: Roll or press the dough until it is approximately 1–2cm thick. Cut it into squares or rectangles.
  6. Fry until golden: Heat the oil to 170–175°C. Fry in small batches for approximately 90 seconds on each side.

Drain the fried bread on paper towels or a wire rack and serve warm.
